# Black Bean Stew

A cheap recipe I use to sustain myself.

# Recipe
8 servings. 20-30 minute prep time. LOW: 8-10 hours HIGH: 5-6 hours.
# Ingredients
2 cups dry rice (makes 2 servings or 2 cups of cooked rice, refrigerate the rest)
2 cups (1 lb) dry black beans
1 yellow onion (diced)
3 Roma tomatoes (diced)
2-3 potatoes, cubed
2-3 bell peppers
3-4 fresh jalapeƱos (optional, for heat level or spicyness)
2-3 carrots, sliced (optional)
6 cups water if beans are soaked; else 7 cups
6 tablespoons Better than Bouillion (1 spoon for each cup of water. Chicken broth will do.)

black pepper
garlic powder
optional spices
1 lb frozen spinach (optional)
1-2 lbs protein (optional)
- Soak beans overnight.
- Cook rice 30 minutes before serving.
- Chop vegetables and throw in pot.
- Add all ingredients besides spinach.
- Cook in slow cooker. LOW: 8-10 hours, HIGH: 5-6 hours.
- Throw in frozen spinach at the last hour/half hour.
- Add rice to bowl. Scoop 1 to 2 servings of stew on top. Optionally add cheese, hot sauce, sour cream, etc. to suppliment. Makes excellent burrito filling.
- Eat it.
